One-Pot Pesto Pasta
Prep Time: 10 Minutes
Cook Time: 15-20 Minutes
Pasta, onion, garlic, artichoke, sun-dried tomatoes and pesto topped with cherry tomatoes, bell pepper and parmesan.
INGREDIENTS
half of a small onion
2 cloves garlic
can of artichokes, drained
¼ cup sun-dried tomatoes
half of an 8-oz jar of pesto
1 cup pasta (uncooked)
1 cup water
salt and pepper
Add a bit of freshness with some or all of the following ingredients:
handful of cherry tomatoes, halved
zucchini, cubed
bell pepper, sliced
Toppings (optional)
Parmesan Cheese
fresh or dried parsley or basil, optional
INSTRUCTIONS
In a pot, add pasta and top with all other ingredients except cheese and herbs.
Add water, cover with a lid and cook over high heat.
Once it is boiling, stir frequently. Reduce heat to low, cover and cook until water has been absorbed and pasta is al dente. If it starts to look dry, add a bit more water (1 tablespoon at a time), or a little bit of olive oil.
Season to taste with salt and pepper, and garnish with cheese and herbs (optional).
